Like many here, I love the Konosukes. I just received a Kono HD 240mm funayuki. I love the slightly narrower and more pointed profile. [Of course I love the standard Konosuke profile too... still sorting out my preference 8-) ]

For comparison I took a side-by-side photo with a standard-profile Kono HH (stainless) 240 mm gyuto. I lined the top of the handles of both knives up with the horizontal seams on the cutting board underneath, and set the butt of each handle the same distance from the edge of the board... so that they line up. Because of perspective differences (the funayuki HD on the bottom is closer to the lens) the bottom knife looks just a little bigger/longer... when in fact the HH knife on top is actually about 1/4 inch longer than the HD.

Anyway, the side-by-side photos should give a better idea of the general difference in the geometry between the standard Kono Gyuto profile and the Funayuki profile.

BTW, the listing title for the Konosuke HD 240mm Funayuki reads "Konosuke HD 240 Gyuto New Shape". It's only in the detailed listing that it states that the "New Shape" is a funayuki. I suspect that might have caused this knife to sit unnoticed/unsold for a bit longer than usual. I don't recall if there were other funayuki's listed the same way. I was very happy to spot this one last week...

Grrr, y'all make this so complicated, but delightfully so.

I'm looking to bridge the gap between my 150 mm petty and ~170 mm santoku with a something a bit more nimble than my Aritsugu (Kyoto) 300 mm Western gyuto that is small enough to comfortably use on a 12"x18" cutting board (my wife finds the 15"x18" and definitely the 18"x24" Sani-Tuff rubber boards too heavy to comfortable handle and too large to easily wash).

I was starting off trying to decide between the Konosuke HD2 240 mm gyuto and funayuki (and it seems like the general consensus it that the funayuki profile is better for someone experienced with Japanese knives), but this 210 mm funayuki just throws a wrench in things.

Any word on if/when the 210 mm funayuki is going to be available? I know Mark is in Japan. Perhaps my timing is good for once!

I can't even explain how delighted I'd be to buy a 165mm-ish funayuki profile Konosuke that's about 40-42mm at the heel.

Hmmm...

I definitely was looking for the quality that Konosuke is known for, in terms of the steel, forging, grind, and general fit and finish of their products. While I don't yet have experience with their HD2 steel, it seems that those here that have hold it in high regard.

I'm certainly open to challenges to my beliefs that Goko and Moritaka are, while excellent knives at their price, not quite the same quality as what Konosuke produces.

Kosuke can't keep up with the demand placed on the Konosuke brand... period. Mark alone has 500 knives on back order; that's one distributor. Adding production models is just poor business acumen.

Neither Moritaka nor Goko utilize a semi-stainless steel such as KonoHD/KikuichiTKC, but utilizing the profile is more where his interest lies, if I understood correctly.
