 Post subject: Please help me choose a J-Nat.

Hi Guys,

Am wanting to get a Japanese Natural stone or two.

Current knives:

Richmond AS Laser
Heromoto AS Gyuto
Goko Gyuto ( White #1 )


Most used stones:

Bestor 1.2k
Reka 5K


Current sharpen technique:

Leading / Trailing on the Bestor 1.2 to burr.
Remove burr on 2/4 sink bridge.
A few trailing strokes on Rika.
Remove burr on 2/4 sink bridge.


I have a King 6K and an Arashiyama 6K and tend to not use them all that often. From this I'm thinking I prefer a final edge in the 3K to 5K range, and given that I dont spend much time on the Rika, maybe ten trailing strokes a side with light pressure, I am thinking I must like a bit of tooth from the Bestor 1.2 left in the mix.

With all that in mind, I'd love to get some advice as to which natural stone(s) might be good to try.

An Aoto would be a good choice if you like a nice toothy edge.

Agreed, An Aono aoto or Monzen aoto would be good choices. Both are soft muddy stones and work very well with the carbon steel knives you mention.

If you want a finer edge, I'd suggest a Meara. This is not a muddy stone, puts a finer edge on, but still has that desired toothiness. The interesting thing about naturals vs synthetic is that there is more of that 'tooth' even with further refinement than with synthetics, so you get the refinement of a 6k stone with the grabby effect of a natural finish at the same time. Interestingly, the Meara seems to work with an incredible variety of steels - certainly carbon steels but also steels like M390. Can't quite figure out exactly why but it does. Very versatile and not real expensive either.

I have both Aono in various sizes from tiny to Monster size and Monzen (just one at the moment) in stock and a few Meara.

Ken is correct a meara and followed by a yahonoshima asagi will fill the next jump. I think i put a few videos out one the cutting power of those I will have to search
