Hi. How do you experienced folks "think" when you use your EP? What I mean is, for instance, different things like how you avoid too much overlap while sharpening, differences in sharpening techniques or goals between new knives and worn knives, how exactly you maintain even pressure along the knife, what you watch for or listen for, etc. etc. Or anything else you might suggest.

I know what the instructional videos and some forum posts say, I guess I'm just looking for the more "subtle" stuff. Little "tricks".

Look at the scratch pattern for overlap. You can use a sharpie, but it's gone in one swipe. Scratches show everything imo. The sound is a nice indicator, so is the lack of slurry when you reach the final stages. At least with Shapton Pro stones.

I don't use a lot of pressure. It tends to flex the blade and creates more wobble.

I find ending with 5 strokes in a different direction helps a LOT with the final polish and sets up the scratch pattern for the next stone. A trick I use from my razor honing technique.
