Hi,
I've been thinking lately that I'd like a kurouchi blade in the kitchen - probably a larger (say 240mm) size. In particular I'm very attracted to the Takeda Sasanoha 240mm and Moritaka 250mm KS gyuto knives. Can you comment on the differences in weight/dimensions between these? I'm drawn to the Sasanoha visually, but I'm curious to know some numbers on height and belly etc. I know they are both AS steel, but where is the price difference come from? I couldn't really figure it out from the comments on the product pages - is it fit and finish? Also, I notice that some folks point out some cosmetic flaws in the knives as they are handmade. Just wondering how you deal with customer service on these?
Also, I need a new leather pad for my lacewood strop base. The dimensions of my base are 10x3, will your magnetic leather pad (http://www.chefknivestogo.com/batabomagpad.html) work?

I can't help with exact measurements as I don't have both here to do so.

However, they're going to be at least similar. Both share the same general profile, but do keep in mind they're all hand made and vary slightly from piece to piece.

The price difference is the maker....Takeda commands a premium for his work. Takeda's knives are typically made slightly better (better grinds being the biggest area), so my money goes with his work. But, that's not that Moritaka can't make a great knife....they can and do....I just think Takeda is that much better to deserve the price he commands.

Again, I don't know the exact dimensions of that pad.....but most HA stuff comes in 11" x 3".

You can just take a utility knife and cut the strop to fit.

Thanks for the reply - one thing I noticed from the videos is that perhaps the thickness of the blade is also a distinction? It looks like the Takeda is lighter/thinner? I'm not sure what I'd prefer... any comments on relative thicknesses from someone who has tried both?

The Takeda knife has variations in size and shape but there is a little more belly on them typically and they're thinner.

They're both nice.

I have the Moritaka 250 KS and it is an awesome knife. Fit and finish are great, so much so that I also have a 150 petty and just purchased a 300mm Yanagiba (the sharpest Ootb knife I have ever received). I cannot speak for the Takeda (because I have never seen one live) but I think I would be hard pressed to find $100 in difference.
