 Post subject: Gyuto Artifex and Edge Pro?

Hi,
I'm looking for a Gyuto about 210mm. I am thinking of getting a Richmond Artifex, but it has a convex grind, so it wouldn't be compatible with the edge pro. I understand the edge pro keeps a fixed angle so it wouldn't be possible to do a convex grind. Would this mean I would be better of getting a diffrent knife, or would it be ok to sharpen to a constant angle and lose the convex? What would be a good angle for the ABE-L steel?

Convex grind and convex edge are two different things. Almost every kitchen knife is convex ground. Some have a more pronounced convexity to aid in food release.

The Artifex does not have a convex edge.
