People always seem to ask me what I carry around in my bag every day, so today I decided to take everything out of my bag and take a picture of it. Rather modest collection compared to many on here, but everything I carry serves a purpose. Have a few more knives and a few cleavers at home, but this is really the bulk of my collection.

I work in a very small, very very high end restaurant, knife theft is not really a concern. I gripe about spoons and tweezers going missing, but when everyone is using the same spoons and tweezers accidents do happen and stuff ends up in other peoples bags unwittingly.

Plating, especially stuff like microgreens. I just find them much easier to plate just about anything with, they feel almost like using a spoon to me. I rarely use the regular ones.

I would be the the first one to admit that have no idea WTF I'm talking about, no PC bullshiite needed. I just delved into the world of sharpening and J-knives 7-8 months ago and never would have dreamed how deep this hole is! :shock:
As far as HD goes that is definitely on my list of experiences to have in the near future! This new world takes time and money to get through, both of which I'm short on.
