I guess that would be a Fujiwara Gyuto. Not overly expensive, but as far as function goes, still a very good knife.

Its debatable... but technically my first good knife was my Shun 8" Classic... but in reality that just opened the doorway to actual good Japanese knifes, so in that regards, I'd have to say my Fujiwara 210 Carbon was a beast for the price, i'd take 3 of those over the one shun classic... and i could just about, but so far the Hiromoto (AS) 240 Gyuto takes the cake.

Miyabi 240mm gyuto, I know its a Henchel but I needed baby steps to get into Japanese knives. Now I'm hooked.

Kikuichi Elite Carbon 240mm gyuto. I had a Kyocera 6" Ming Tsai Santoku that was OK, but I never used it. I got tired of the old, dull Henkels from my grandfather, so that got retired when I got the Kikuichi. Now I have too many to name!

Tojiro DP 240 gyuto.

It got me started into another vortex, but good J-knives seem to hold good value, a lot better than some other hobbies.............I've since loaned this one to my b-i-l, hoping to hook him as well. Right now I'm loving my Richmond Laser, what a great knife!! But the Tojiro will always be the first.

Mine was... French.
K Sabatier paring knife, 4".

I had worked with decent German cutlery before, but this was my first look into the world of great carbon steel. It's life actually began as a factory blank in the 40s, at which point it ended up in a warehouse. Some Canadian guy recently bought up the forgotten inventory and started finishing them as accurately to the time period as possible.

It still comes to work with me every morning, even as my collection has grown to include much finer Japanese knives.

Kasumi 180mm santoku & boner VG-10,moved on to Moritakas 240 gyuto,honesuki and santoku( blue #2),now I gots me a Kono HD 240mm.... :)
