I bought the Shapton Glass stones and long side edges are higher than the middle area, because both sides are dark gray. It seems like the middle are doesn't make contact on some portions of the knife. What would cause this? >> >> I'm wondering if these stones are defective.... I'm beginning to reget the high purchase price. >> >> Dave
Dave, I'll throw my 2 cents in since I originally tried the cheaper diamond plate, but I found that only the Atoma plate was truly DEAD flat (Apparently some of the DMT plates are as well). Plus the Atoma has a very consistent diamond pattern which works great for setting new bevels or thinning secondary edges, etc. Yes it does cost significantly more, but you just need to determine what's best for your own needs. -Josh
