Based on the joint recommendation of Adam and Melampus I bought this knife to replace my loved Wusthof.
I liked the Wusthof because it wasn't too long, wasn't too heavy, veggies just dropped right off the blade (even potatoes),
and was the most efficient knife I'd ever used for chopping veggies. Since I have the stamped model and not the forged model the blade is thin and a tad flimsy but that was my only gripe.
The new knife arrived quickly. Just a few days.
When I opened the box of the Sakai, it looked awesome but it was heavier and longer so i was a bit apprehensive and wondered if I would get used to it, or how long it would take to get used to it.
I grabbed a potato out of the panty, squared it off, and started slicing thru as if making french fries. I was immediately astonished how great it was. As hoped, the hammered finish seemed to help the food from sticking to the blade. It was nice and sharp, out of the box.
This is easily my favorite knife. I grabbed several more potatoes out of the pantry and quickly made a batch of french fries to celebrate.
This is also my most expensive knife, to date, so weigh that into the mix.
I find this style of knife to be fast, efficient, precise and very safe.
Looks like I got the last one, too.
