I have been reading on your website about sharpening stones and after seeing your videos on YouTube about them I would like to replace my diamond sharpening jig (smith's) with whetstones.
I would like to use this for kitchen knifes (we have Global knives), bushcraft knives (use classic Norwegian knifes and ESEE knifes), chisel tools for woodworking, leatherman, etc (see the attached picture for a selection of knives I found around just now).
Can you help me choose stones (3 I think?) as well as flattening stone if this is needed and any other items to have a complete system (Mat/holder, deburring-thingie etc).
I don't want the cheapest option as I would like this to last a long time.
Not the most expensive either since it is not for professional use, but I do like all tools to be of good quality and the stones should be as well.

I am leaning towards getting the Shapton glass stones (as you talk a lot about them in your videos), with the stropping set and holder pluss the de-burring block.
