Hi Mark

It is Lance here from New Zealand. I have brought a few great products from you over the years.

I am after a nakiri knife to add to the collection and be my new best friend. I have been looking for ages and think I have worked out what some options could be, though I need your guidance.

You have the kasumi nakiri which if I am right is the sharpest knife out of the box and you also show the video of the Tetsuhiro nakiri which looks great two. Which would you say is the sharpest?

Also could you let me know what the freight would be to Masterton Nz

Following on from my last email I think I actually want to go to the shun usaba.

The video says it has a 15 degree angle on both sides, is that right and not a single bevel?


What are your thoughts on the knife?
Also as I want this to be the sharpest knife I have ever seen, would it be worth while getting you guys to finish the edge off so that it is perfect

I need it very soon as it is a treat for my 30 th birthday in a couple of weeks .

Hi Lance,

We have a number of really good nakiris. To get you the best knife for you answer a couple questions here if you don't mind:

1. Are you right handed?
2. Did you want stainless?
3. Do you know how to sharpen?
4. Do you want a Japanese style handle?
5. How much did you want to spend?

Once we know these answers we can give you some good recommendations.

Right handed
Stainless
I have the edge pro custom and a strop with carbide paste
No price range given.

Asked about the shun usuba and I told him to pass on that one.

Ok, here are a couple that are excellent nakiris with shaving sharp edges and are stainless steel.

Konosuke HH Nakiri: http://www.chefknivestogo.com/kostna18.html

Kanehiro Ginsanko Nakiri: http://www.chefknivestogo.com/kagina16.html

Both are excellent knives and would be fun to own and use. There are others but you will be happy with bout of these. Kanehiros are hand made and more rustic looking. Konosukes are nicely finished by hand and thin and light and easy to work with.
