Hi there,

I had a friend recommend I check out your website for a new knife that I'm going to be using daily in the restaurant I work at. I'm leaning towards a gyuto style knife probably with an oval shaped handle instead of the octagon types. I also like dark brown wood handles and I think I want something at the 240mm length. I'm looking to spend between $150-$300. Do you have any recommendations I should check out based on this? I want something that will hold up to doing various tasks and want this to be my main to go to knife in the kitchen,

Well, I think we have a winner. That was my gut feeling after looking through all the recommendations made by Adam above. Thanks for the advise. Do you know if any of the universal sayas would fit the Goko?

Also, I'm pretty new to knife sharpening but want to get started on this myself at home also, I've seen others mention the 5pc sharpening set: http://www.chefknivestogo.com/3pcstoneset.html as good value and good for beginners. Would this be a good choice for the Goko?

Also what is the purpose of a stone holder and do I need one?

Not sure about the saya's fitting, Mark would have to answer that one.

I do really like that stone set. I've come to favor the Ume 1k a bit over the 1,200 Bester....but the Bester is still a really great stone and something I still use today and have used very happily for years.

You don't "need" a stone holder, but they're nice to have......either that or a sink bridge:

You can make a sink bridge or a stone holder from some of that sticky shelf liner stuff

Neither is going to perform as well as the Goko. Both are prettier to some, but performance wise....not really all that close IMHO.
