Here is another question, what is the different between the konosuke HD 240mm funayuki gyuto and the konosuke HH 240mm funayuki gyuto?

I made up that name funayuki Gyuto because it's kind of a cross between those two knives. Actually the funi gyuto is similar to the shape Murray Carter uses on his funis. It's a little flatter blade profile with less belly so it's a little better for push cutters and a little less good for rocking the knife. Not a big difference except to those that use their knives all day long. Then small differences make a big difference to pros.

KNIFEY <> I'm not Mark, but the two lines are made of different steel. The HH is stainless while the HD is semi-stainless. Both are at 61HRc...

For me, the more significant difference between the standard and funi gyuto is not in rock vs. push-cutting (you can do both with either), but in the usefulness of the tip. I find the funi/gyuto tip to be much more nimble.
