I purchased a few things from you in the past, and I need/want to purchase a couple of things more. Living in the UK I found out that delivery costs plus customs plus VAT make the whole exercise rather more expensive than it should be. I will be in the US in about 3 weeks time for one week, so my question is, will you deliver to a hotel ?

I'm in the market for a long slicer/carving knife/sujihiki (270-300 prefer the longer but not crucial), to be given as a gift, has to be 50/50 bevel.
I was looking at the following

Konosuke HD 300 http://www.chefknivestogo.com/kohd30wa.html at $366

Takeda Yanagiba 275 http://www.chefknivestogo.com/tayaasdoed27.html at $370 (I got a Takeda from you and it's fabulous)

Masakage Koishi http://www.chefknivestogo.com/mako30su.html at $399, there is also a 270 version. There isn't one single review on any of the Masakage knives, so don't know what people think of it, from the look and description seems similar to Takeda ?

Moritaka Damascus http://www.chefknivestogo.com/moritakyanagi.html which looks nice and has a nice discount (is this 50/50 ?)

Suisin Inox 270 http://www.chefknivestogo.com/suinhowa27.html at $445, probably somewhat above my budget

and there are many more , like
Sugimoto http://www.chefknivestogo.com/sugimoto- ... i-270.html
and others.

Of those above, the one that 'attracts' me is the Konosuke, but there is much choice, which would you recommend at this price range (or lower ?) ? The intended use is mostly for meat, roasts etc, but probably also for more general cooking.

Hi Eran,

Your attraction to the Konosuke HD 300mm Suji is well placed. That would be my choice out of the group especially if you already own a Takeda. I think it's way more interesting to try different makers than to stay withing the same brand. You learn more about knives this way. Get the Kono.

Of those you listed, I've not tried the Masakage.

Of those I have tried, the Kono HD and the Takeda would be my two favorites. To me, it's more a question of carbon KU version stainless as they're both freaking fantastic knives.

I'm with Mark in that I would recommend the Kono over the Takeda since you already have one....if it were for you. But since it's for a friend, I don't think that matters as much. I don't think I could give you a push to one or the other....both absolutely wonderful. :) Flip a coin.

Thanks. So I'm leaning towards the konosuke (or will flip a coin..). I would like to hear an opinion from some about the Masakage if someone has used these knives before ? There seems to be very little information or reviews about them.

I haven't used a Masakage Sujihiki yet, but from what I can tell of their other knives, it's going to feel very much like your Takeda, only thinner.

You can't go wrong with a Kono suji, and if you want something even thinner and lighter than that, check out a Suisin Inox Honyaki... paper thin blade, but I like the HD steel a little better.

Thanks, so I guess a Kono sujihiki it is then, I don't want buy something too thin.
Do Konosuke knives come very sharp out of the box, or should I have it sharpened before giving it away ?

Define "very" and I'll answer that. :)

They come as most factory knives do....sharp, but could certainly be improved. I'm nuts though and no edge is acceptable unless I can Marty McFly the space time continuum.

I was very impressed with the OOTB edge of my Kono HD... I was not expecting it to be as sharp as it was... However, I was even more surprised how well and easy it took an edge... Kono HD's... where have you been all my life..
