I'm with Adam. Try one of Shosui Takeda's knives. He does good stuff and you should own one of his knives. The knife is evenly sharpened and will be pretty easy to sharpen with your edge pro.

Well, I did a little checking and found that Mark and Adam have never be wrong about things like this, so the 275mm Takeda it is!
