Really matters what the purpose is for the knife. If it is for home use and time is not a major concern then go with the carbon steel. However, if you are in a kitchen and in the middle of service then a high carbon knife would not be practical because you won't have time to properly wash and dry the knife between uses.

All I have to say is, WOW! Light, nimble, thin, sharp, feels good in my hand, and so on.
