How would you compare the AEB-L steel on the Artifex with the VG-10 on the Tojiro? Holding an edge, ease of sharpening, and stain resistance?

How about the Micarta handle on the Artifex vs the wood handle with bolster on the Tijoro for holding up in the kitchen environment?

I have a Tojiro DP 240 that is still new in the box......trying to decide if I want to return it and get the Artifex. Thanks for being patient with my questions!

Both stainless steels are good. AEB-L sharpens a little better. They both have good stainless properties. I don't think most people would be able to tell the difference unless they are descent sharpeners. Edge retention is similar. Heat treatment matters with these steels too. HRC 60-61 seems to be the sweet spot with both of these steels.

I wouldn't mind trying out the AEB-L...sounds like a good knife steel.

I like AEB-L over VG-10. Sharpens and deburrs easier, and holds a cleaner edge longer; VG-10 can feel sharp, but the edge is rough feeling. Handle F&F on the Artifex is nicer than the Tojiro and the handle doesn't feel as blocky as the Tojiro, but the handle on the Artifex is a little smaller.

Ive had a couple Shun's and a Tojiro with vg-10, overall nice but then I bought an artifex with aeb-l. It changed everything for me. Its a really amazing steel. Sharpens up really well, holds the edge for a long time and doesnt chip like vg10 does. Go with Aeb-l. You wont regret it.

It's not the steel, but the implementation.

The Artifex needs some tweaking of the grind to be up to the OOTB Tojiro, but once you've done that, it's a better knife in my opinion. Easier to sharpen, easier to thin (no cladding) and less prone to scratching (the soft cladding, again). Edge retention is going to be a coin flip. The handle materials are essentially the same, but the Tojiro wins in this category only if you want a stainless bolster.

If I were to choose a knife for use in a pro kitchen, I'd pick the Artifex.
