Hi,
I am very interested in your Richmond line of knives, but I have a few questions and would appreciate any advice that you would be willing to share.
I have three of the high end, nice, Henkel knives, but want a very good knife specific for cutting vegetables, that will become our daily go to knife. I would prefer an American made knife that is the opposite of my German knives, so I think I want a thin, very sharp, Japanese style knife. (Not sure though.)
Can you please advise as to which knife both my wife and I would appreciate that would be thin, very sharp, very good with vegetables, and not similar to the three traditional Henkel knives that we already have in the knife drawer?
I was looking at the Nakiri, but know nothing about that style blade.

Sounds like youre looking for a Nakiri. Made for veggie prep.

May I ask why you prefer an American made knife if youre looking for a Japanese "style" knife. While I appreciate the merits of things being made in the states, I would recommend dropping your predispositions and get a "Japanese-made 'Japanese style' Knife." If im not mistaken the AS Richmond knives are outsourced in Japan.

I must chime in and say that there is nothing wrong with wanting and American made "Japanese style" knife. They can perform as well as many Japanese made knives. Nothing wrong with trying to support the economy at home from the designing, to the production, to the retailer.

I love Nakiri's!! I have 3 of them already and a 4th incoming. Look at the Richmond Artifex Nakiri for an entry level, made in the US Nakiri. There are lots of Japanese made Nakiri's out there that will perform as well or better due to the different styles of grinds.

The nakiri is one style that will be quite hard to source as US made....the Artifex is the only one I can think of short of having one custom made by a US maker.

If the Artifex nakiri looks good, I'd start there. It's a good knife.

Gyuto knives work well with vegetables too if the nakiri doesn't suit you. The Richmond Laser or Artifex are two Gyutos that are American made That handle veges well. The Fernadez Gyuto is another.

The Richmond Laser is made in Japan, not the US. The Addict, Artifex, Ultimatum are made in the US as is the Fernandez and Pierre's MidTech.

No problem! There is a little difference in the grind in the US vs Japanese made stuff; the Lasers are the typical Japanese grind where the US stuff is a bit different. Both work well, but the Japanese style of grind works a touch better usually because it tends o be thinner behind the edge.
