 Post subject: Upgrading my Tojiro 240 Gyuto

Looking for a new gyuto. I currently have a 240 Torijo. It has a small chip near the tip. It has been a great knife. I am hoping to upgrade. I am ok with 210 or 240. The artifex looks awesome for a home cook. But if there is something significantly better please let me know. I am not looking for a $400 knife though.

Second looking for new stones for my edge pro apex. I have hand america's strop kit and it works great. I need something to stop the dishing in the stones also. Please let me know what you would recommend.

Are you right handed?
Do you know how to sharpen?
Do you like to rock the knife or push cut primarily?
Do you want a stainless knife?
Do you want to get a western handled knife or Japanese handle?
How much did you want to spend?

Do you mind if I post your question on our forum?

Also, do you want your knife tip fixed? I have a knife sharpener that can do it cheaply and he'll sharpen the knife while he's at it. If you do let me know and I'll put you in touch with him.

Do you know how to sharpen? Yes. But I use the edge pro mostly. I also use hand america's strops.
Do you like to rock the knife or push cut primarily? Push cut 80%. I also cut beef often for stir fry. I cut around the large fat masses.
Do you want a stainless knife? I prefer stainless or semi stainless.
Do you want to get a western handled knife or Japanese handle? I open to either. But I am interested in trying a Japanese handle.
How much did you want to spend? 50-300 dollars. For example if the ultimatum m390 is way better than artifex, I would go that route. I really would like this to be the "knife".

Do you mind if I post your question on our forum? NP, please any help would be appreciated.

I actually sold Shaun's knife but I'll be getting more soon.

I keep forgetting about his knives for some reason but I have one and I like it a lot. It's got a really nice custom handle and the steel is excellent. He's a damn good sharpener too so that would be a good one.

Let me email you when I get more. There will be some different handle choices available.

If you would be open to trying some stainless clad, carbon core knives, you could get a bigger selection. Not that any of the one's recommended thus far are bad, they're great...just saying.

Knives like the Goko, Hiromoto AS, etc. are great as well.
