Konosuke's knives come in about every 2 weeks but I don't know what's coming until they email me right before shipment.

Currently they owe me 585 knives.

This is why I custom ordered a 210 Funayuki @48mm, that took 10 months to build mind you, just to get a 210 in the blessed HD steel Image, but for the masses... the general population.. the sheeple - 42mm fits pretty well. German knives (i.e., Wusthof/Henkels) are a good baseline to judge the masses taste, and they come in around 45mm.

I need at least 48 mils. I rounded it off at 50....but then again i do alot of pinch grip/push cut.

A 42mm knife, for me, is kinda dangerous in terms of the guiding knuckles on the other hand. One little wrong move at speed and there goes the flesh on the top of your knuckle. 50 mils lessens this quite abit(for me). If you're a handle slicer however, this HD would probably be great!

Well, for my stab at this:

The Tanaka, like Adam said. http://www.chefknivestogo.com/tanakagyuto1.html is not stainless, requires a bit of care, but has a nice damascus finish, very good cutter too. Fit and Finish is a little "unpolished" though. Mr. Tanaka also makes swords, your son might like that fact. (Several makers make swords also, but it's nice to remind people who don't know). ;)

If you want something with a cleaner F&F, but still needs to be cared for, then grab a Hiromoto http://www.chefknivestogo.com/hiasasustkn.html
These are also clad with stainless, only the edge needs cared for.

For a knife that you don't have to worry about reactivity (aka stainless), and very nice damascus finish, I'd grab a Maruyoshi HD http://www.chefknivestogo.com/hattoriknives.html
