After getting to work with one extensively in a professional kitchen, I really think a Tojiro ITK 120mm petty is a great knife. It takes a nice edge and holds it well, even with very reactive ingredients. Maybe the 150mm petty or step up with the Wa-Gyuto. My only complaint about the 120mm is that its a little short.
I guess that's why I just got a Konosuke Stainless 210mm Wa-Petty. I think I'm addicted.
