I don't understand all the negativity towards Henckels. :) I love my Henckel (even tho i don't use it as much as my vegetable knives)...it has great steel, tougher to sharpen but holds a lasting edge, nice feel, nice for slicing...it's great! I have one of the yellow handled, commerical-type twins...and i don't think that it would be all that different sharpening it, bolster or not! You just have be mindful of the bolster! YMMV. :) I think all the knives on this site are good, depending on your likes, preferences, etc... :arrow:

Great choice Carleen! Really hope that you enjoy that knife! I've heard awesome things about that steel.
