Recently recieved a Tanaka 240 ginsako gyuto and wanted to share the progress of this project.

New out of the box:

Choil shot: [ Thickness : ~2.6mm Height from handle: ~ 45mm]

Checking the grind:

Exposed high/low spots:

Very straight blade and claiming HRC 62.
The spine was very sharp OOTB and has been rounded
Choil was very sharp as well and has been smoothed some.
This is a knife I currently use in rotation for work and may be a slow paced project. Hopefully I can get the new handle installed in the next few months.
:shock: Spoiler Alert :shock: Handle is to be afzelia xylay with black buffalo horn and silver spacer.
I'm liking this one so far! :)

Congratulations on the acquisition!

I have a couple Kurouchis, and have nothing bad to say beyond the handles, but what can you expect at that price point? ;)

As we all know, Tim LOVES the Sekisos.

Hideyuki rocks out a quality knife, and that G3 design looks interesting w/two bevels. CRAZY affordable, too! I see a 270 gyutu for $160 @MM. :shock:
