 Post subject: Replacing old Global with $400 budget.

Looking for new all purpose chef knife, I have been using a global gf-34 for about 13 years. I want something Japanese, stainless, 2 sided blade, western style but handle doesn't have to be and around $400.

Kikuichi TKC is a great workhorse. F+F is very good. About 4-5 months of 15hr shifts, 6 days a week and no signs of patina. Good results for semi-stainless. http://www.chefknivestogo.com/ichimonjitkc.html
