Mark,

I'm looking to buy my first set of Japanese knives. After looking at the forums I'm thinking that a Gyotu and a Petty/Pairing knife will cover 99% of the bases for me. I just purchased a set of water stones and I intend to learn how to sharpen and maintain my own knives so I want something that is easy to sharpen/maintain.

I was looking at the Moritaka and Tanaka knives. I'd like to spend no more than $200 for the pair. However, I might go a little higher if I can get something that is of higher quality. What is your opinion of these two brands? Are there other knives I should consider? I'm wanting Kurouchi style knives too.

We have a growing selection of knives that fit your criteria and I encourage you to try a mixed pair since it's way more fun to try different knives. So try the Moritaka petty and the Tanaka Gyuto. I think that would be a fun pair and they're both good knives.
