 Post subject: Santoku or Gyuto?

I recently picked up my first handmade knife, Takeda Nakiri, and realize how heavy and dull my other knives feel. Which style, santoku or gyuto, is more universal for a home kitchen? I'm realizing I like the light feel and the wa handle. I rock cut with my old knives probably because they aren't as sharp as they should be but with my new Takeda I find my self push cutting more but it rocks just fine too.

I would expect Gyutos to be more common.

Thats certainly the impression I get from reading all these knife forums!

I like the Gyuto. I never understood the apeal of the santoku. I think it was just a fad.

Some people like a Santoku for the home. I don't mind using one, but they are usually too short; I prefer a 240mm gyuto to a 210mm gyuto any day and most Santoku's are between 165mm and 180mm (7"), so they feel short. If you already have a Nakiri, the flatter edge profile of the Santoku will be somewhat redundant to the Nakiri's flat edge, so I would go with a 210mm or 240mm gyuto instead.

gyuto is the most versatile but the santoku can do many things as well. a gyuto or chef knife can do things the santoku cannot, only because of the tip that the santoku lacks.

a sheep's foot shaped blade limits this versatility.

We sell lots more gyutos than santokus but for those that want a smaller all purpose knife santokus are a good choice since many gyutos don't come in the 160-190mm range. Years ago Rachael Ray made the Santoku a very popular knife type when she used one (ironically a Wusthof) on her tv show. I was told more Japanese households use santokus as their go to knife but I don't know for a fact if that is true. It seems to be true judging by all the ones that are offered to us.

Well, what are you looking for in the gyuto? Push cuts, rock chopping, Wa handle, Western, Carbon, Stainless, etc?
