Hiromoto AS is a very nice knife.

A gyuto is more versatile than a nakiri. However, like Taz said, you can do a lot with a nakiri and it's one of my favorite shapes for my home cooking.

Now I have a bunch of knives to choose from.

I'm standing on the precipice, ready to jump, however, I would love a recommendation on a stone set.

I wanted to get the Shapton 6 pc Starter set, buts its out of stock... Recommendations?

I was going to go with Shapton because I've read about the brand all over, no other loyalty.

Shapton is kind of the gold standard. If you want them, get the 2 piece set:

Looks like the deburring block is out of stock right now and the reason why the 6 piece set isn't available.

Alright... After all this, the Dojo is out of stock. Help.... :(

Mark, how often do you receive new shipments?

Also, Adam, your work is outstanding. I'm making the Dojo my learning/ project knife and in a bit I'd love to send it your way to have a handle fashioned in the same style as the TKC Gyuto with the hidden tang and mosaic pin.... Beautiful!

That looks great! The last question I have is about the difference between the Goko and the Tanaka Damascus, with a Blue Paper Steel Core. Supposedly, it's also a great quality carbon core clad in stainless? Sorry for the incessant questions. I'm a researcher, so I need as much information as possible before jumping in.

The Goko is hand made, hand hammered hand heat treated in a small blacksmith shop.

The Tojiro Damascus blades are also hand made and then sent over to their handle department for the handle work. It's a much heavier knife than the Goko which is very light. Aogami is a little harder, keeps it's edge a little longer and is a little more difficult to sharpen.

Yeah, the Goko's are very nice for the money. Definitely worth a look.
