I have an itto-ryu 210 gyuto I'd be willing to trade or sell for a reasonable offer it has been re-ground by Shaun Fernandez aka mr.knife fanatic it is a great knife just not practical for me at work. I will take trade for wet-stones or knives! Either way hate to get ride of it just have to many knive my girl friend is starting to look at me funny! I don't want her to think I'm dexter or something lol hit me up if your interested! Make an offer who knows I may feel generous also will take trades for something interesting if you have it!!!Image

So thought I'd post a mini review....

Out of the box, I honestly wasn't very impressed. It was rough, and clunky. It has a very pronounced belly, which travels all the way to the heel. The finish in the blade face was scratchy, and low grit. It had the sharpest, most uncomfortable choil I've ever seen. Literally had a butt edge.

Well, I sanded the entire thing down to 800 grit, removing the scratches. Rounded the choil and spine. I popped off the handle, to flip it around, since I'm a lefty....low and behold, rust. Lots of rust. Obviosly an iron tang. You could actually see the holes around the machi where it enters. Also around the copper tube lining the ferrule...this called for some epoxy, as I didn't want this to reoccur to the newly sanded tang.

Thinned a bit, and installed an edge....

Took it to work, and put it through its paces....

It's a beast. Virtually no distal taper. Very thick at the tip. Very pronouced grind. It is an anti-wedging machine. Affter cutting my days prep, it took on a nice patina. The edge had a very pronouced cowering line, similar to Carters or Hiromotos. It showed some wavy lines up to the heavy iron cladding, which just took on some graying.

All in all, this knife is lacking quite a bit in fit and finish. And it is no daily driver. But, I can quaranty the next time I have to cut a case of potatoes, it will be my first choice. Will its special task designation survive the test of time, and keep it in my rotation...only time will tell.

For $260, I would expect much better fit and finish. Such a poorly installed handle is unexceptable at any price. That being said, true " mighty" gyutos are few and far these days, and often fetch $300 plus. The history and materials are pretty neat, too. Itto-ryu makes some pretty wicked stuff upon research...

Can't comment on the white #1 as of try, ad I've only beat on it for a short while. It did sharpen up nicely.....
