I'd tend to agree with most everything Taz says....except in so much as to add that the heat treat of a steel can really affect it's performance.

Take for instance VG10.....in the Shun's is garbage, in the Hattori Forum knives it's amazing.

As you know, I just ordered a Richmond 270 Sujhiki and a Custom CCK Cleaver, which you've already shipped, in like 20 minutes.
Thanks very much.
My Yamashin 165 is sitting in my mail box waiting for my return.

Best part, GF is out of town, no hassle with "what the hell do you need more knives for, they all work the same"
