I'm trying to decide on the best one as my first gyuto. What might make my question more unique is which one will have better success with sharpening? The convex edge on the Richmond gives me pause. Using a mousepad is the only way I know of to sharpen them and I've never done it.
I've got a stock EdgePro and a Spyderco Tri-Angle Sharpmaker. The honest truth is that 99% of the time I'll use the Sharpmaker, as the EdgePro is a bit of a pain to use.
I'm looking at a 210mm, as it will used by the wife quite a bit and she's not a fan of anything larger. I like the bolster on the Tojiro but am not sure about the edge life vs. the Richmond's.
I'm curious why the convex edge was used on the Richmond. (No better place to ask than here
Any help would be appreciated.
One last question. What's the Rockwell for the Tojiro?
