Hello Mark,

I've been looking around for a new Knife and the Addict 2 2 Gyuto seems like the perfect choice for me, sadly its out of stock, can you tell me when it will be back in stock again?

I also have a few questions regarding the knife, so bear with me, this is the first "proper" knife I'm buying as I have been working with rather cheap ones before.

I'm currently learning how to sharpen knifes using waterstones, are there any specific waterstones you'd recommend for the knife? Can I use a horning rod on it? (I'm thinking a ceramic one would be good)

If the Addict 2 won't be restocked any soon, what other alternatives would you recommend me? I'm looking for a nice, big gyuto, preferably around 240mm, it should be a good workhorse, relatively easy to sharpen and not much more expensive than the Addict 2 since I also have to pay shipping to Germany plus customs. It also wouldn't be bad if it would look as great as the Addict 2!

Hi Bastian,

My Addict should be back in stock on Monday or Tuesday. I'm getting 4 of them so they won't last very long. More will be done in a couple weeks.

What stones are you using now? I'm guessing what you have now would be fine.

Hello Mark,

Thanks so far for the help, I currently have one Naniwa 800 grain waterstone and another cheap one I dont really like too much. I've been thinking about buying a set that consists of the following grains: 240, 800, 2000, 5000. I'd skip the 800 grain stone, but they are combo stones with two sides each. Does that seem like a good choice?

Edit: Oh, and, can I use a ceramic honing rod on the knife or would that do more damage than good?

If you use a ceramic rod, do so gently and you shouldn't have any trouble.
