I would say a very nice finish with a touch of bitiness. Definitely ease of use....but I mainly plan to strop about 20 strokes on each side total on the finish stone. Not sure what you mean about sloppy...but I guess I am in between (lol).

I am leaning towards the Naniwa Snow White as I hear the Kitayama is better served after another 8000 stone to put a real nice finish on a knife.

Love the snow white myself. Very nice creamy feedback. Haven't tried the Kitayama 8k.

Like the Snow white more myself for reasons much like Michiel, but you will get opposite opinions. This is more a matter of personal taste. Not really a wrong answer here.

" better served after another 8000 stone" - I think this is really just one sharpener's quirky idea being spread around. Hard to see any real logic to this idea at all. I suspect he gets this result by not using his other 8k ish stone long enough to adequately resolve the scratch pattern from his previous coarse stone. IMO an idea best ignored. You would probably get the same result just using the Kitayama stone twice as long as he did :)

I don't know the specifics of these two stones, but the idea may not be far fetched. I was just looking through my Lee Valley catalog and see a grit chart. Just to quote some things that jumped at me:

Norton 8000 grit, particle size 3 microns
Imanishi 4000 grit, particle size 3 microns
Imanishi 8000 grit, particle size 1.2 microns

I could see how one may want to follow one "8K" stone with another 8K stone.

<offtopic>This may also explain why Nortons came out as faster compared to other stones when honing A2 steel, yet not the greatest at cut quality.</offtopic>

Check out the Shobu San. It's a Natural stone around 8K and leaves a nice bite to the edge. I go from the Rika 5K to the Shobu.

I believe the Nortons use a different rating system so in that case you are correct (Yea this makes things confusing). Good point. It's been a point of amusement when people call a stone a 'fast' fine stone only later to find that the stone actually is a coarser stone. Additionally even two stones rated with the same micron particle size often don't have the correct median particle size and can have differing 'distributions around that particle size.

So back to the original point. For another same grit stone using the same grit rating system, I think you would be better served by just going on to a finer stone for further refinement or using the one stone at say 8k a bit longer.

For reasons of personal sanity, I tend to use a conversion of grits to microns of 1k = 16 microns and 16k = 1 micron and deriving the rest from there, e.g. 4k = 4 microns 8k= 2 microns etc. Not perfect and could be criticized, but works for me.
