If you only get one plate get the Atoma 140 (1st choice) or DMT XXC (2nd choice) IMO. If your fine stone is out of flatness you need the 140. I use a 400 on minor flattenings on finer stones as much to texturize the surface as anything else as I prefer finer stones not to have coarser scratches or get unnecessary wear.

Lately I've been using a round stone recommended by Tanaka-san for flattening and texturizing. It works quite quickly, both on synthetic and natural stones and is quite reasonably priced with essentially no stiction issues. Actually a pretty clever approach. I'll be talking more about this later but contact me if you want more immediate info on this approach.
