First of all thank you for your help. OK.
Looking for a wa-gyuto or santoku for home use (first real Japanese steel and handle in a cooking blade for me)

Not afraid to go with a carbon or carbon clad but doesn't have to be. (collected very nice knives when i was younger and i'm sure this will not be my last japanese steel.)

I would like it to be pleasing to look at but function over looks, just not to rough. I would like to have some pride in owning it. you know more of an instrument than a tool.

This is going to be a gift to me from someone else so i would like to keep it under $120. If it is possible to get something nice at that price or lower.

Ive looked at a several hundred knives and read as many pages to only conclude that im not capable of making an educated decision without dropping 350+ so i pass it on to the pros.... please help.

For that price point and a Wa handle you basically have three choices:

210mm
Sugimoto http://www.chefknivestogo.com/suwa21.html
Tojiro http://www.chefknivestogo.com/todp21wa.html
240mm
Tojiro http://www.chefknivestogo.com/todpwa24.html

I don't have experience with any of these, but if I had to choose I would pick the 240mm Tojiro simply because the 240mm is my preference. If you are drawn to the $350 knives then I would either adjust the budget or look for a 150mm petty instead and save up for a ~$225 Gyuto budget.

The Moritaka 150mm petty is one I have and incredibly awesome! http://www.chefknivestogo.com/moritaka3.html $130

Budget stretcher, but probably more along the type you want:
Moritaka Aogami #2, 210mm guyto http://www.chefknivestogo.com/moao2gy21.html $145
-or-
240mm http://www.chefknivestogo.com/moao2gy24.html $170

This tojiro hammered carbon steel wa gyuto is a little over your budget but not much and it's a nice knife:

I like BB's suggestion for the Moritaka too.
