Other than my Shun 7 inch hollow ground Santoku knife, I do not have any experience with a Japanese knife. I want a Japanese knife for an average cook. So I was looking at your Richmond Artifex 210mm Gyuto M390 and I was wondering if it is that much better than the regular Richmond Artifex 210mm Gyuto. I will spend the extra money on the M390 if it is a better knife and value. What I am really asking is why buy the regular Richmond Artifex 210mm Gyuto if the M390 blows it away. I apologize for the silly question but who else to ask than the person with the name on the knife.
Also would the M390 be easy to sharpen on the Shapton glass stones 1000 and 4000?
The M390 version of the Artifex was meant for people that wanted to try this new super steel. It's highly abrasion resistant and more difficult to sharpen but it holds it's edge extremely well. I actually think the knife works best for steel nuts and people that don't know how to sharpen.
For you I would recommend saving the money and getting the AEB-L version. It's what I use and I love sharpening this steel. It's good stuff.
