ZACH <> A few things to add:

#1: I hate to call Rookie out, cuz I love him, but the HD(2) moniker represents the second generation of steel in the HD line. It is still a High Speed Tool Steel, but the elemental proportions are slightly different in hopes to extend edge retention.

#2: It sounds as if he is explaining the Funayuki which, in fact, has less belly then the Gyuto & the tip 1/3 of the blade has less height in comparison to the Gyuto. He owns the Funayuki; I own two, as well. I find it allows finer precision with tip work.

#3: Bear in mind, the Kono-Tall... IS TALL! To each their own, of course, but I'm 6'2", 225#, have huge hands & the 49mm height on my Funayuki is awesome. I only raise the point because the 57mm Tall... IS TALL so maybe measure some knives you have to reference what you like before dropping the coin.

#4: You reference loving carbon steel. The HD/HD2 are "semi-stainless", but in numerous climates across the nation, I have never experienced any reactivity with them. Im not saying you love reactive blades, but the Tanaka is really the only Carbon Steel you proffered in your 4.

I am a strong proponent for HD/HD2's; I own five, but they're not carbons... close - but not.

I'm going to strongly recommend that you go with the standard height Kono HD2. It has plenty of knuckle clearance. On the tall blade heights I really don't understand the draw to them in my cutting experience the only thing they do is add surface area increasing overall friction and sticking of product.
