I finally got a chance to measure the wife’s knife (Wusty). As I mentioned before I want to replace her knife (details below) with a 150 mm petty. It must have western handle, full stainless steel or stainless clad with stainless core, good F+F, crazy sharp, and good edge retention while being easy to sharpen. The wife currently uses this one knife for 100% of her knife work. I want to keep the new knife as similar as possible (shape) but increase length to 150 vs. 134 she uses now. Basically, that eliminates my selection to only tall 150 MM petty, no santoku etc

blade height: 29.09mm and SRS15. People on forum seem excited about R-2 so this is no longer in the running. I suspect R-2 easier to sharpen and hold an edge better but that is a guess on my part.

This seems to be top dog on the block with a top dog price. I should remove it from my list but I can hold of an extra month before ordering and come up with money. blade height: 32.58mm that’s the best one yet

great alternative. blade depth: 31.13mm. Meets my above 30 mm criteria. However, it is VG10. My drug dealers forum has made me believe R-2 is better for edge retention and sharpening but again that’s a guess on my part.
