I hear you Salty, and agree. All mine are in the truck, under the toneau cover. There are as many or more anti hunters as there are guys who hunt. These hunters are in a couple classes. Those who hunt for the antlers, and the meat is an afterthought, and guys like me and my brother-in-law, who hunt for the food. As I said, I passed a 60 inch moose, to take a younger bull that would provide superior table fair. Also, the thought of preservatives, growth hormones, unsanitary processing etc, gives me confidence that what i provide my family is somewhat better.
As for the antlers for knife handles, I try not to use them for handles, due to a number of issues from experience.

The ferrules fell off my antler handles.

On a hunting knife, antler or bone should be OK, but on a kitchen knife, I would shy away from both unless they are well stabilized.
