A while back I purchesd an EdgePro Chosera custom Kit with 10k stone. The 10k stone shattered in a tragic accident. I was looking to replace it, but there are so many new options now. I'm lookign at the Chosera 10k, Shapton Pro 8k and 16k, Shapton Glass 8k, or strops and paste.
I use a Tojiro DP in a commercial kitchen at 12-15* (24-30* included) mostly for vegetables, sometimes for fish. I have an EP kit with Chosera up to 5k, Idahone Ceramic and HandAmerican Borosilicate rods, an angle cube, a drill stop collar, and wine corks to remove the burr.
My budget for additional equipment is $100.
Can anyone suggest a system, protocol, or procedure to obtain and maintain a hair-popping sharp edge? How far should I be chasing the burr?

The steel is VG-10. I therefore doubt that is very useful to go beyond the 5k. A lot of people stop at 2-3k, than strop on newspaper or split leather. I really can't see how you could get any improvement with another stone. That being said, I'm sorry to hear about your 10k.

Naniwa Snow White or shapton Pro 8k are my favorites. You could get some 1 micron CBN or Boron Carbide semi paste after that.

I think some strops would make a good addition to your set. I like the balsa strops for the edge pro and you can buy some sprays or pastes to load them. You'll get hair shaving results when you add these to your kit and you can do it and stay within your budget.

I agree with mark that stropping after polishing is the way to achieve hair popping/grape tomato drop holding sharpness. I have the EP Chocera too. For the knives that I desire a toothier edge I stop at 5K.
Have you considered a Japanese natural stone? AFTER 5K I use the Ohair then Ozuku both slurried by a nagura stone, then use marks unloaded 2X6" roo strop. Repeatable results every time. Hope that helps

The Snow white 8k is a nice stone here. Then stropping with some 0.75 micron CBN (24k) is a nice bump up - on Balsa or leather.
I'm conflicted on VG-10. I keep not stopping at 2-5k and liking the results I get. I wouldn't bother to go too acute with VG-10. Yea finishing on 'roo does go crazy sharp. Not so sure it will last long, but while you got it enjoy it.

I would wait for the Arashiyama 6K to come in and get some ep strops,better finish and edge than the 5k chosera on the Arashiyama 6K,actually considered an 8K under different names.

Perhaps it is a suggestion to perform some serious thinning "behind the edge" before modifying the very edge.

We just got some 30K Edge Pro Shapton pros in a couple weeks ago if you want to really go down the rabbit hole.
