At my work we had a major kitchen change (I do not work in kitchen). Kitchen under new management and all new hires starting next week. As I was filling trash bags like crazy I found this knife. I am the idiot cleaning the kitchen.
I asked around. Turns out this knife belonged to the Saus chef who takes care of his stuff. He went on vacation and left his knife by mistake a few months back. One of the ding-bats used it while he was gone and put it to the communal stone (crappy steel eating stone). Well ding bat screwed it up. Saus chef lost his mind (pissed) when he got back and just gave it ding bat. Ding bat is gone now and left knife. It is now my knife. I am going to let a professional fix it for me. Notice how its not flat anymore because it was over sharpened in the center. You can see the gap on the counter top picture.

Is it a UX 10 or 440 series? I suspect 440
