Nubatama Knife cladding material

Hi Mark,

Thanks re the info on the reactivity of the edge, but is the cladding stainless?
I.e. will only the edge react?
Currently the nakiri has no handle fitted are there options available for this?

The blade is stainless and the edge is carbon steel.

Here's a picture of my Nubatama Santoku, which sees almost daily use for a couple of years now in a home kitchen environment. I maintain my knives well and have nor corrosion on the cladding, a nice patina on the black steel and a polished edge.

While I would like to give detailed reports of sharpening this knife, in the YEARS of use, I have been able to maintain it using a 15k Nubatama stone a couple of times and CBN on Kangaroo for usually a tenth micron finish edge.

The background is a Nubatama cutting board (a Japanese wood).
