Hi Mark,

I am going to order the Yamashin 210mm gyuto tonight or tomorrow to try out an inexpensive white #1 gyuto. I do have a couple of questions for you first.

1.) How does the fit and finish and overall quality compare to the Tojiro ITK?

2.) What is the weight of the knife and what is the Hrc of the steel?

Hi Eric,

I'm excited about getting these. They will compete well with the Tojiros.

They heat treat these at about 61 rockwell.

The fit and finish are better than the Tojiro ITK line but that's not a real high hurdle.

The grinds look pretty good for this price point. Nice and thin.

The handles are so so. Ho wood with plastic ferrules. They're oval with even grinds so these are a better choice than the Tojiros for lefties.

They put a lacquer on the blades and the edges are nice and thin on the ones I checked. I think they're going to be popular. I tried one for about a month this summer and I think it's a good knife.

looks good for budget wa handles knives. interesting. i have been "piqued" by these because of you mark. lol.
