I agree with Ken Schwartz that you would find the Nubatama 150 to be a great addition. I love mine. As for VG10 and other hard stainless steels, I really prefer the entire line of Shapton Glass stones to anything else. I find all of the Shapton glass stones to be aggressive stones and a relief when dealing with hard stainless steels. If you prefer stainless knives, I would seriously consider building a Shapton Glass series of stones, starting with the lower grit stones like the 220 and work your way up.

The Shapton Glass Stones are really excellent stones and I recommend them all the time for beginners and serious sharpeners alike.
