We are in the process of switching over to the all new Konosuke HH Stainless. HH stands for High Hardness and we've asked Konsosuke to harden these knives to HRC61 and the result is a marked improvement in edge holding ability along with excellent stainless protection.
This has been months in the making and I'm really pleased with the results. All the ones that say HH in the title have been changed over to the new series. Right now we have the 240mm gyutos in stock and more are on the way.http://www.chefknivestogo.com/ko24wa.html

Hmmm. I have been thinking about selling off my TKC and picking up one maybe, maybe not. Have to love a Kono.

Once word gets around and we have supply these are going to be very popular. I'm using one now and its good. Really good. Reminds me of my Laser actually. I get that AEB-L vibe from it. I wish they would tell me the steel they're using.

When you say "switching over"... what exactly does that mean? Are you dropping the regular stainless line?

No they're actually the same line, same steel. The only thing that's changed is the heat treatment. Because of this they're getting a new name HH which will be on the knives so the new ones will be swtiched over to the new HH designation.

I have ordered one of the kono knives and hopefully it gets shipped out tomorrow
then I will give my input on the performance of the knife. I wanted to find a knife that was laser-like but still have a little backbone. I think I am going to be very happy with this knife, can't wait to find out.
