I am trying to decide on a low grit stone now. Kinda have my eye on the nubatama bamboo 400, http://www.chefknivestogo.com/nubatama4.html
, but no reviews. It is a hunk of stone though. Just something to think about.

Thanks for the input all. I think I may have to be a pioneer here and go with my gut.

so LucaBrasi, Does that mean you are going with the Ume 320?

Yes that is what I'm thinking. Whether I find it the best ever or awful, I am sure I will be able to thin and set bevels with it. Sometimes you just have to scratch an itch.

Curious....the Latte has not been out all that long.....HOW THE HECK DID YOU WEAR IT OUT ALREADY?????
Hahaha.....sorry but that actually surprises me.

Got it about a year ago. I don't know man. I've done substantial thinning on an Artifex gyuto and carbonext suji. Like I said, the zdp endura is a kick in the pants to sharpen. I've also sharpened several of my families various mushy steeled western knives, a hatchet and a machete on it. But once each for those last two, and not very much time spent on the latte.
I learned on it, and likely wasted quite a bit while trying to sharpen everything I could find in order to get practice before moving to my good knives.
It also just wears fast in my experience. I change the bevel on a gyuto then have to flatten the hell out of it. I really don't think I've over done it with the flattening either, often times will stop short of completely flat just for the sake of preserving stone. Last time after sharpening out a micro chip in my endura (5-10 min) I flattened for a minute and felt the stone and could feel the most obvious gulley between two flat plateaus at the ends. I must just use a ton of pressure.
I have really really enjoyed the stone, and think it does a great job. And it's not gone, still about a third left. Just looking for another option to try. I don't regret getting it at all.

I had the same experience, I wore a few mm off a latte in just a few hours of use. It had a great feel but would not last long in my hands.
