Hello,

Wondering if you could give me your opinion on a new chefs knife. I'd like it to be no more than $175 and I'm thinking either 8 or 9 inch blade.

I don't know alot about them and you have alot of options on your website.

I currently have a henkels twin signature I received as a wedding gift. I believe it is one of the stamped ones in the $60-70 range.

1. Are you right handed?
2. What type of knife are you interested in (gyuto, nakiri etc..)
3. What size knife are you looking for?
4. Do you prefer carbon or stainless steel?
5. Do you prefer a western handle or a Japanese handle?
6. How much did you want to spend?
7. Do you know how to sharpen?

This would be a good knife to try. Good steel, stainless, in your price range.

How about Goko or Kikuichi Performance TKC. They are just over my budget, but I suppose I can up it to 210.

I would highly recommend the Kikuichi tkc, great steel and great performance. Great intro to Japanese knives as well and if you get into sharpening it takes a wicked edge.
