The new addict carbon will be one of the best sellers guaranteed, not overly hard to sharpen and holds a wicked edge if sharpened properly about 13-15 degrees is perfect. I sharpened two today and mine tour up 5 lb bag of russets for potato salad, several shallots for Maranide for a flank steak mixed with worschestier, shallots, lime, and garlic. After grilling it sliced on the bias perfectly thin and fell through it like butter. The flank was served on a cesar salad with flank on top and a bowl of good o'l south mustard tater salad. I am now full and the carbon still looks perfect with a mild red/brown/blue patina. Mark has got another winner again his mind is like a machine that thinks up new stuff daily. I suggest everybody buy at least 2. Jmbullman

Can't wait to give it a try. I have been enjoying 52100 with the Richmond Ulimatium. I miss a taller gyuto at times and the Addict will be perfect! The price point is awesome!

I just shipped addict 2's back to mark today plus 1 52100 addict first come first serve u better e mail mark if u want any of them. Their perfect in every way and razor sharp I will gladly email anyone a pic of either one the addict 2 or 5100. I am expecting artifexs soon for sharpening plus 5100 for handles and sharpening. Jmbullman. I shouldn't do this but I have a Cck 1303 with edge flattened and sharpened for 25.00 lie shipping pics are avaliable through email will consider trade. Jmbullman
