Need Help deciding? 240mm gyuto

Thu Apr 25, 2013 10:32 am

Hey guys.
I am looking to add a new addition to my kit. I am looking for a 240mm wa handled gyuto, preferably "laser-ish". I guess I would like it to be made up of carbon alloy or semi-stainless. I currently have a tojiro white#2 210mm gyuto and really like and would like to try a 240mm. The knives that have caught my eye are:
Konosuke white #2
Konosuke HD 2
Masamoto KS
Sakai Yusuke
Richmond Laser Aogami

Any thought or other recommendations are greatly appreciated.
Allen

ALLEN <> I'm an HD guy; it's perfect in so many ways for me. W/o much of your info, I can't give an appropriate recommendation beyond my preference... and the HD it is.

Masamoto KS is THE perfect, thin, non-laser knife. It is as good as a knife can be, but it is not a laser.

Konosuke White #2 and Konosuke HD perform at the same level, but the HD is easier to care for. The Kono 240s aren't quite 240, while the 270s are so light and handle so well, they might as well be.

The only Sakai Yusuke White #2 I've handled was a heart beat less well finished than the Konosukes. Generally true? Luck of the draw? Quien sabe?

I've never met a Richmond Laser Aogami, and because I dislike san-mai knives so much probably couldn't give it a useful evaluation if I had. But note that the 240mm Aogami is a bit on the tubby side for a laser. It's the same weight as the 270mm Kono HD, and almost 2oz heavier than a 240mm Kono HD.

To my mind these two are as close to perfect as a knife can get. It's nice that both were on your list. Although they're different, I expect you'd be equally happy with either:
  • 270mm Konosuke HD, if you're set on a laser; or
  • 245mm Masamoto KS, if you're chasing Goldilocks's "just right."

I rather much echo BDL's thoughts except in so much as I think white #2 will perform differently than HD.

White #2 will take a better edge than HD in my experience, but you have to have the skill to get the edge there in order to realize this attribute.

Thanks guys for the input. In terms of sharpening I have a the ctkg 5 pc kit. I would say I can get a pretty sharp edge on my knives.
