Need a good petty.

I have had the privilege of buying multiple knives from you in the past.

I am in the precess of replacing a 15 year old Kasumi 5 inch utility knife that is close to the #82012 knife here.

I was thinking of the Misono UX10 series but they have a single bevel. Cheaper single bevel knives that I have used drive me nuts.
I assume that this knife is much better.

I have purchased Takayuki Hammered Damascus and Tojiro knives from you in the past.

I am retired and enjoy cooking as my daily activity.

I am looking for a 5 inch utility knife that I won't want to replace for another 10 - 15 years.

Your recommendations would be appreciated.

There are a bunch of good choices on the site.

Would you like to try a wa handle? They're fun to use and I like them a lot. Also, do you want stainless or would you like to try carbon steel or stainless clad around carbon?

The Misono UX10 is not single bevel...it's asymetrically ground slightly to the right bias....but definitely not single bevel.

I do like the Hiromoto G3 recommendation, but another good one is the Masamoto VG:

I have handled a few of the Hiromotos and really like them, it will probably be my next purchase through CKTG.
