Yes, definitely. What kind of boning knife would you recommend? I mean, I am slowing building up my kit. I like these knives a lot. I guess I shouldn't have called them a beginner's kit.

I really don't care for Shun knives. I don't know why. I mean, I like them more than Globals, Henckles, and Wusthof... but for me that's not saying much. Does it out perform the others knives in the category?

NGUYEN <> In my experience, it's the best profile boning knife on the site. In a boning knife, you are not going to face the VG-10 horror stories with chipping that we all know. Fit & finish on Shuns are absolutely phenomenal... excluding the Sora of which is just a cheap knife.

Which of the two do you prefer? I really prefer wa-handles, they just fit better in my hands. However, it all comes down to consistency and performance and maintenance.

I will keep that in mind! Definitely trying to get the most out of my petty though. I know its a good line knife, but not where I work now. Too many careless people who don't respect the honor of the carbon knife.

My boning knives are pretty crap. I have a Calphalon I got as a gift and an ancient Forja Colonial (looks like an Old Hickory, but I think the FC is a little nicer). That Tojiro DP Gokujo is looking pretty sexy.

That Kono is a serious piece of craftmanship. That is a knife people would be very privileged to start out with, haha.
I don't personally ever have a need for a dedicated boning knife. I have a petty that has always done the job since I bought it.
